Chicken Kebabs (hey, i warned you!)
1-2 lbs. chicken breasts or tenders, cut into chunks
1 can pineapple chunks
1 red onion, cut into chunks
1 lb. thinly sliced virginia ham
cherry tomatoes
1-2 green or red peppers, cut into chunks
kc masterpiece hickory smoke honey barbecue sauce (or whatever you like best)
soak skewers in water for 20 mins. i do this while i prep all the veggies and chicken. thread veggies, chicken and ham onto skewers. i fold the ham into fourths and place right in the center of the skewer. it adds great flavor. grill for about 8-10 minutes, or until chicken is done. i typically marinate the chicken for 24-48 hours first: try 1 can mountain dew and 1/2 c. soy sauce (and a touch of vegetable oil), or 1 can sprite and 3 limes, or 1 bottle of bacardi mojito-flavored beer and spicy grill rub. this is optional, but sure makes the chicken tender. brush kebabs with barbecue sauce (and one of those silicone brush things that kick so much ass) right before removing from the grill. serve with brown rice, salad, or alone!!
Recipe of the Month (maybe the year!)
Jungle Juice750 mL EACH of orange and strawberry vodka
750 mL raspberry rum
1 pint everclear
2 L of diet sprite (or regular)
1 gallon cranberry juice
1 gallon orange juice
cut up assorted fruit, including:
watermelon
cantaloupe and honeydew
strawberries
grapes
cut up fruit, pour entire bottles of liquor (EXCEPT the everclear) over the fruit and let soak overnight. Just before serving, add the everclear, juices and sprite. Serve over ice.
